This one isn't for the feint hearted - it's a no holes barred sugar fest muesli bar but boy is it tasty and far better than anything you could buy in a shop.
Mumma Troll's Muesli bar
250g Rolled Oats
200g Dessicated Coconut
200g fresh dates - stoned and chopped
150g any cereal - I used Ginger Flax and Cashew Commotion by Nature's Path, because that's what I had.
140g sunflower seeds
150g Pecan nuts broken into pieces
320g unsalted butter
260ml golden syrup
250g soft light brown sugar
A baking tray approximately 25cm by 35cm which is 10 inches by 14 inches or thereabouts.
In a saucepan put the butter, sugar and golden syrup and heat slowly until all the ingredients are combined.
In a separate BIG mixing bowl, put all the other ingredients and stir to combine. Once the butter and sugar have melted ( do not overheat or boil) stir the liquid mixture into the dry ingredients and put into your greased baking dish. Flatten the mixture with the back of a spoon and put into the fridge overnight.
Make sure you lick every bowl clean!
Your job is done until the morning when you can cut them into 24 reasonable sized pieces. These are very high calorie and sweet so do not make the pieces any bigger.
